  Philippe COMBET has been the Head Chef at Château de Mercuès for fifteen years.

After an apprenticeship in Provence, he has the privilege to work in Michelin starred restaurants with famous Chefs such as Louis Outier at "L'Oasis", Jacques Chibois at "Gray d'Albion" and Christian Willer at "La Palme d'Or" (Hotel Martinez).
  His refined and elegant cuisine "Quercy-Mediterranean" is a deep tribute to the local products. Passionate, inspired and very talented, Philippe Combet likes cooking in rhythm with the season and proposing different variations of fresh typical products. Among his specialities : truffle !
